The first step before you get cooking is to pick out your shell fish. When deciding which one you’re going to take home always look for the most lively and energetic shell fish. Liveness and energy is a good sign your lobster is fresh, young and hasn’t been sitting in your grocery store tank to long.
A good test of high quality, fresh crustaceans is limb responsiveness when touched. When picking up a lobster its tail should curl under when picked up. If your shell fish is lifeless it’s possible the crustacean had been chilled reducing movement or has been stored for past quality duration in its tank.
A easy to spot and vital tell tale of bad quality shell fish is shell condition. When buying lookout for cracks or missing body parts, this can have an affect on the flavor/texture of your shell fish when cooking in boiling water.
